I just thought of this hilarious image concerning things in Deathly Hallows. Some spoilers:
In Deathly Hallows, Professor McGonagall has a cat Patronus that heavily resembles her Animagus form (a tabby cat with spectacle markings around its eyes). So, we can take it as canon that whatever your Patronus is, that what your Animagus form would be.
So, it follows if Snape's Patronus is a doe, that would mean that if he were to become an Animagus... ... ...

It's a metaphor (or simile, whatever you learned in your English class - it really makes no difference). The narrative is comparing Snape's escape to something that it really isn't, but it closely resembles. It's a poetic device.
